About our products

Early harvest olive oil — known in Greek as agourelaio — is pressed from olives that are picked while still green and unripe, typically in October. At this point their polyphenol and antioxidant content is at its peak. The result is a fresh, slightly bitter, and aromatic oil with a more intense flavour than conventional olive oil — and significantly greater health properties.

Cold-pressing means the olives are extracted mechanically without adding heat — the temperature is kept below 27 °C throughout the process. Heat increases yield but destroys the delicate aromas, polyphenols, and vitamins. Cold-pressing preserves the oil's full nutritional profile and gives it its characteristic fresh flavour.

Polyphenols are natural antioxidants found in olive oil — including hydroxytyrosol and oleuropein. They protect the body's cells from oxidative stress, have anti-inflammatory properties, and are linked to reduced cardiovascular risk. The European Food Safety Authority (EFSA) has approved a health claim for polyphenols in olive oil. Early harvest olive oil contains significantly more polyphenols than conventional olive oil.

Most supermarket olive oils are late-harvest, blended oils from multiple countries — optimised for price and shelf life rather than quality. Our oil is single-origin, hand-picked early harvest, cold-pressed from a single producer in Greece. That means full traceability, higher polyphenol content, and a fresh, vibrant flavour you won't find in mass-produced products.

We work with producers who respect the land and follow sustainable farming practices. Product descriptions on our product pages clearly state any certifications. If you have questions about a specific product, you are always welcome to contact us.

Store the oil in a cool, dark place — away from direct sunlight and heat sources. A cupboard or pantry is ideal. Avoid keeping it next to the stove, as repeated heat exposure accelerates oxidation. Refrigeration is not necessary and can cause the oil to become cloudy and thick, which reverses at room temperature.

Unopened, a bottle typically keeps for 18–24 months from the pressing date. Once opened, we recommend using the oil within 3–6 months to enjoy it at its best. The best-before date is printed on the bottle. Early harvest oils with high polyphenol content are naturally more stable than conventional oils.

Yes. Extra virgin olive oil has a smoke point of around 190 °C, which is sufficient for everyday cooking, sautéing, and oven dishes. Its high monounsaturated fat content makes it more heat-stable than most vegetable oils. For deep-frying at very high temperatures, a neutral oil with a higher smoke point may be more suitable.
